Roasted Vegetable Grain Bowl
Serves 2
What you'll need:
1 cup cooked quinoa
1 sweet potato
1 cup halved brussels sprouts
2 beets
2 cups cauliflower
1/4 cup almonds
salt
pepper
onion powder
avocado oil
1/4 cup tahini
2-3 tbs honey
Half juiced lemon
Step-by-step:
Preheat oven to 425.
Wash and cut veggies however you like. (Be careful with beets, they are messy).
Place all the veggies in a bowl and toss with avocado oil, salt, pepper, and onion powder.
Place vegetables on a baking sheet and cook for about 25 minutes.
Remove veggies and cook almonds for about 8 minutes.
RINSE quinoa and boil until cooked.
Whisk up the tahini, lemon juice, and honey for a quick dressing.
Layer your bowl together and enjoy!
