Before you call me crazy, hear me out... Avocados make the most perfect sauce because of its consistency. Have you heard of avocado toast? The only thing different between avocado toast and this is that we are using a different carbohydrate.

Now that I have convinced you, let's talk benefits. Avocados are a great source of antioxidants and anti-inflammatory compounds including vitamin C and vitamin E. Avocados also may reduce heart disease risk and are beneficial for gut health because they are filled with fiber. This recipe is truly nutritious AND delicious!
Avocado Pasta Sauce
Serves: 4
What you'll need:
2 ripe avocados
1 box of your choice of pasta
Salt (to taste)
Pepper (to taste)
2 minced garlic cloves
1/4 cup of olive oil
1/4 cup of basil
¼ cup of parmesan cheese
2 tbs of lemon juice
Red pepper flakes (optional)
Water (if needed)
Step-by-step:
Boil your pasta water and generously salt.
In a blender or food processor, add avocados, salt, pepper, basil, garlic, olive oil, and lemon juice.
Blend and taste. Add water if consistency is too thick.
Drain your pasta and toss with your sauce.
Garnish with red pepper flakes for a kick and some cherry tomatoes.
