When I ate vegetarian, I tried to mimic flavors of dishes that contained meat, just like these tacos. Would you believe me if I said the base of this recipe is cauliflower and walnuts? When you roast these together with all the spices and peppers, you get a smokey flavor similar to chorizo. Even the texture is similar! Top with a homemade pineapple salsa for sweetness and your tastebuds will fall in love.

I know it looks like there are a lot of elements to this recipe, but I promise it does not take long. Once you start baking the "meat", you can prep the salsa and all your other desired toppings. These definitely have a little kick to it, so be weary when adding the adobo peppers if spice is not your thing.
"Chorizo" Street-Style Tacos
Serves: 4
What you'll need:
2 cups of cauliflower florets
2 cups whole walnuts
1-2 chipotle peppers in adobo (add at own risk)
1 tbs chili powder
1 tsp cumin powder
1 tsp smoked paprika
salt to taste
Pineapple Salsa
1 pineapple
2 deseeded jalapeños
1 bunch of cilantro
1/2 diced red onion
salt to taste
juice of 2 limes
Step-by-step:
Preheat oven to 375 degrees.
Line a baking sheet with parchment paper.
Add cauliflower, walnuts, spices, and peppers to a food processor.
Lightly pulse until you see ground beef-like texture.
Add mixture to the baking sheet and bake for about 25 mins, tossing halfway.
While the "meat" is baking, assemble your salsa in a bowl.
Heat up tortillas of your choice (I used flour).
Combine ranch and chipotle sauce to drizzle over your tacos.
